Easy Black Bean Salad!

Here is one of my favorite spring & summer time recipes. It is so easy because I usually cheat and don't measure anything! And seriously, the hardest thing about this recipe is opening a few cans & chopping some veggies! Also, if I'm missing one (or more than one!) ingredient, I skip it. Very flexible!


Here is the "official" recipe, but don't be scared to make substitutions or take out the things you don't like!

BLACK BEAN SALAD:

1 can black beans

1 can corn (or 1 1/2 cups fresh corn is even better!)

1/4 to 1/2 cup chopped fresh cilantro (I LOVE cilantro, so I usually go heavy on this!)

1/4 cup chopped red onion

1/2 cup chopped red pepper

1/4 to 1/2 cup chopped green onions

1 fresh tomato, chopped

1 can Rotel

1-2 cloves garlic, minced

Juice of one lime (about 2 Tbsp)

Mix it all together and chill for a couple hours. That's it! Easy salad-slash-appetizer that everyone is sure to love!
